Happy Canada Day! What better way to kick of July than to celebrate our nation, the sunshine, the last day of school (yesterday), and that strawberry season is in full force! Each year at the end of the school year, our family goes on a camping trip where we celebrate the season with a Strawberry Shortcake social.

I loooove fresh strawberries and crave shortcake all year long. To keep myself from over indulging (because I could eat this every meal while berries are in season), I’ve come up with a this easy Weight Watchers Strawberry Shortcake Recipe. Typically most light dessert recipes include Angel Food Cake, but I find the strawberry juice makes it too soggy. This tea biscuit recipe is the perfect density for the juicy berries and to take on the road camping, they stay fresh for a few days and the berries can be sliced and mixed just before serving.

Prepare these yummy Tea biscuits to keep your strawberry shortcake light
Recipe type: Biscuits
Serves: 16
Ingredients
  • 2 cups flour
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 2 tbsp. butter
  • 3 tsp. sugar
  • 1 cup milk
  • 1 cup Sliced Strawberries mixed with 1 package of Splenda No Calorie Sweetener (per serving)
  • 2 tbsp. of Light Cool Whip Topping (per serving)
Instructions
Biscuits-
  1. Mix first 5 ingredients; slowly add milk until mixture comes together. Scoop mixture (using a medium size scoop, or tablespoon) onto a parchment lined baking pan. To keep biscuits at 2 points each, recipe should yield 16 small biscuits.
  2. Slice biscuit in half, place one half in the bottom of the bowl, top with strawberries and Cool Whip, place second half on top.

When hosting a strawberry shortcake social from a campground picnic table usually means there isn’t a lot of fuss when it comes to decorations and serving-ware.
