I love a good challenge, so when my friends @AtlanticSuperstore challenged me to come up with a fun dinner recipe using some of the ingredients in my Loblaw Food Trends box in 40 minutes or less, I accepted and slipped right into my apron! This month’s featured trend is Cooking on the Clock, and I can appreciate being able to whip up a meal quickly. Most days seem rushed so having a few delicious easy meals up my sleeve helps me get through the busy week. Especially as we head back into school season, Loblaws and Atlantic Superstore are helping me find solutions to still enjoy delicious meals without having to give up too much of my day to make them.
We all have busy lives, and don’t have time or energy to spend hours in the kitchen… especially in this heat wave, when we’d rather be poolside. However, sometimes quick means sacrificing creativity or flavour in our meals. No one wants bland meals so I hope this Mango Noodle Salad Bowl or Mango Peanut Nachos will help satisfy your taste buds, without having to give up too much of your day to make them!
Mango Noodle Salad Bowl
Ingredients
For the salad
- PC Rice Stick Noodles
- Lime
- Mango
- Peanuts
- PC Onion Cabernet Wine Jelly
- Chopped Cabbage Salad Mix
- PC Blue Menu Black Beans
- Green onions and sesame seeds for garnish
For the meat
- 1 lb. Ground Chicken, Turkey or Pork
- 2 tbsp. Soya Sauce
- 1 tbsp. Fish sauce
- 3 tbsp. water
- 1 tsp. Sriracha
- 1 tbsp. Honey
- Juice and zest from half a lime
- 3 tbsp. natural peanut butter
Follow package instructions for preparing the rice stick noodles. Meanwhile, in a bowl, whisk together the above wet ingredients. In a small pan, brown the ground meat, drizzle with the sauce and continue to brown until combined.
Arrange salad ingredients in a family size bowl, drizzle with second half of lime juice, and top with a few tablespoons of PC Onion Cabernet Wine Jelly, garnish with crushed peanuts, chopped green onions and a sprinkle of sesame seeds.
Mango Peanut Nachos
Alternatively, if salads aren’t your thang you can easily swap out the salad ingredients for nacho chips! My new favourites are PC Lime and Habanero Chili chips.
Spread the nacho chips on a parchment lined baking sheet. Top with diced mango, black beans, ground meat mixture, sprinkle with grated cheese, and garnish with green onions and a squeeze of lime. Bake in a 350 degree oven until cheese is melted and chips are warmed. Dip in fresh mango pineapple salsa, or PC Mango and Lime Salsa.
Give the nachos a generous squeeze of lime just out of the oven, zest too if you really like a limey zip! As strange as peanuts sound on nachos, they are a must, very delicious!!!!
