After a very hectic summer and a few too many indulgences I headed back to Weight Watchers. It has been a while since I checked in, and let me tell ya, owning a restaurant the struggle is REAL. These Weight Watchers Crock Pot Chicken Tacos are simple, delicious, filling, and very little work!
Plus I teamed up with some of my favourite foodies to share their best slow cooker recipes too, check them out at the end of this post!
My favourite go to suppers are generally Mexican inspired. I was happy to put together a Weight Watchers smart points meal that is so fresh, low in points, and kid friendly.
But wait… add some fresh mango pineapple salsa to the mix and your taste buds will think they went to ZERO POINT heaven! Yep, ZERO smart points!
It tastes incredibly fresh and makes the perfect sweet and spicy combo when paired with the Crock Pot Chicken Tacos.
Just throw your chicken breast in the crock pot with a bit of seasoning and walk away, you’ll be all set when supper time rolls around.

Pulled chicken is so easy to create into a variety of dishes, don’t limit your imagination to just tacos. I’m thinking fajitas, rice bowls, club or taco salad, even a protein snack or added to some zucchini noodles, yum!
