My favourite go to suppers are generally Mexican inspired. I was happy to put together a Weight Watchers smart points meal that is so fresh, low in points, and kid friendly.

But wait… add some fresh mango pineapple salsa to the mix and your taste buds will think they went to ZERO POINT heaven! Yep, ZERO smart points!

Serves: 20 tacos
  • Pulled Chicken
  • 2-3 Boneless skinless chicken breasts
  • 1 cup of water
  • 2 tbsp Chili Powder
  • 1 Tbsp Cumin
  • 1 medium onion (julienned)
  • 1 jalapeño pepper, (seeded and minced) *optional
  • 2 clove(s) garlic clove, finely chopped
  • Salt and Pepper to taste
  • Fresh Mango Pineapple Salsa
  • 1 cup mango, diced small
  • 1 cup pineapple, diced small
  • ½ cup red onion, minced
  • 2 cups english cucumber, diced
  • 1 cup colored pepper, diced
  • Juice of 1 lime + zest
  • Cilantro **optional
  • 1 jalapeño pepper, (seeded and minced) *optional
  1. Pulled Chicken
  2. Add the chicken, water, onion, garlic, cumin, black pepper, chili powder, S + P, to the bowl of a slow cooker. Gently toss to combine.
  3. Cook on low for 6-8 hours or on high for 4-5 hours until the chicken is completely tender and shreds easily with a fork. If you have a pressure cooker style cooker 20 minutes on 9psi will do the trick.
  4. Use a fork to shred the chicken into bite-sized pieces. Don’t discard the juices, this will blend nicely with the seasoning to keep your shredded chicken moist and your tacos delicious.
  5. Serve immediately in tacos, burritos, salads, or use to add protein to your snack! This chicken can also be refrigerated in a sealed container for up to 3 days, or frozen for up to 3 months.
  6. Fresh Mango Pineapple Salsa
  7. Combine all ingredients in a bowl, Squeeze lime over top and stir to combine. Spoon over your dish.

Pulled chicken is so easy to create into a variety of dishes, don’t limit your imagination to just tacos. I’m thinking fajitas, rice bowls, club or taco salad, even a protein snack or added to some zucchini noodles, yum!
